Banana Bread

This recipe makes one dense and moist loaf.

 

Ingredients:

3 very ripe bananas, peeled

1 1/2 cup all purpose flour

1 1/2 tsp baking powder

3/4 cup brown sugar (1/4 cup less or more depending on how much of a sweet tooth you are)

1 pinch salt

1/3 cup coconut oil, warmed to liquid (can use 1/3 cup melted butter if you prefer)

3/4 cup Greek yogurt (full fat) (can be substituted with 1 cup cream cheese or 1 cup yogurt cheese, or can be left out entirely)

1 egg, beaten

1 tsp vanilla essence

Optional Ingredients:

1-2 tsp cinnamon

chopped nuts of choice

 

Method:

Preheat oven to 350F (175C), and grease or line a 4x8in loaf tin.

In a large mixing bowl, mash the bananas with a fork and then stir in the coconut oil and Greek yogurt.

Stir in the sugar, egg and vanilla.

Add the flour, baking powder and salt (plus any optional ingredients).

Once all mixed in, pour into the prepared tin. Bake for 45-60 minutes, basically until when a knife is inserted in the center it comes out clean.

Remove from the oven and cool on a rack (if lined rather than greased it's best to remove from the tin and peel off paper while warm).

Whenever I make banana bread it always seems to not cook fully in the middle. Than I have to cook it longer and it comes out a little dry. Any tips on how to fix this?

Try adding just a bit more oil (1 to 2 tablespoons) for moisture. It's the fats that keep it moist rather than the liquid ingredients. I find my oven requires the full 60 minutes, even if it looks 'done' at 45 minutes, in order to avoid the doughy center.
