To many, "hotdish" is a common Minnesotan thing. This recipe is from my hubby's family.
Preheat oven to 350.
4 medium potatoes - cubed
4 medium carrots - sliced
1 lb. hamburuger
1 large onion - diced
1 can tomato soup
Parboil potatoes and carrots for about 10 minutes.
Brown hamburger and onion, add salt and pepper to taste. Drain.
Place in alternate layers of potatoes, carrots and hamburfer in a casserole dish. Pour tomato soup over the top. Add a little water to the can to rinse and add.
Make 45 - 60 mins, uncovered at 350.
