Ingredients:
1 lb chicken breasts
Garlic salt
3 medium white onions
4 tomatoes
1/2 can of chipotles
Oil
1 tablespoon white vinegar
Place the chicken breasts in a pot with enough water to cover them. Add 1/4 of onion and garlic salt. It takes around 90 minutes for the chicken to cook, (with the Pressure cookers it takes around 25-30 minutes)
Once it is cooked remove the chicken to a bowl, and set aside until cool enough to handle, then shred the meat with your fingers or a fork. Save 1/2 cup of the chicken broth.
Slice the onions.
In a skillet heated over medium heat add the oil, when the oil is hot, add the onion slices and cook until translucent, stirring often.
In the blender add the 4 tomatoes, vinegar, chipotles and 1/2 cup of chicken broth.
Once the onions are ready add the tomato mix to the skillet and cook for 5 minutes, then add the chicken and salt to taste. Cover and simmer for 20 minutes.
Serve, you can eat it with tostadas, tortillas or just like that. :)
