This soft and chewy cookie is a family favorite and a much appreciated surprise when visiting or welcoming quests.
Double Chocolate Oatmeal Cookies
1 1/2 cups sugar
1 cup butter softened
1 egg
1 teaspoon vanilla extract
1 1/4 cups all purpose flour
1/2 teaspoon baking powder
1/3 cup coca powder
1/2 teaspoon salt
3 cups uncooked quick oats
6 ounces semisweet chocolate chips
Pre-heat oven to 350 F
Lightly grease cookie sheet.
Combine sugar & butter in large bowel.
Beat with mixer at medium speed until fluffy.
Bear in egg & vanilla.
Sift together flour, cocoa, baking soda & salt.
Stir into cream mixture.
Add oats & chocolate chips.
Dough will be very stiff.
Add up to 1/4 cup water is needed.
Form tablespoon size balls and place on prepared cookie sheet.
Flatten slightly.
Bake 10 - 20 minutes.
Makes 3 - 4 dozen.
Tips:
Batter can be refrigerated for an hour to firm up before baking.
An additional cup of chocolate chips or chopped walnuts can be added .
